This Tiffy Cooks recipe pairs crispy-skinned chicken thighs with a garlicky, sweet-savory black pepper sauce. Serve it with rice to catch the glaze.

The chicken

  • 4 boneless, skin-on chicken thighs
  • Salt and pepper, to season
  • Cooking oil, for the pan (the source does not specify an amount)
  • 1½ tablespoons butter

The sauce

  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • ½ tablespoon black pepper, adjusted to your spice preference
  • 1½ tablespoons minced garlic
  • 2 tablespoons honey
  • 2½ tablespoons ketchup

Season to taste. Cooking times stay the same; use batches for larger portions.

Let's cook

  1. Season. Sprinkle salt and pepper over both sides of the chicken thighs.
  2. Heat the pan. Add cooking oil to a pan over medium-high heat. When hot, place the chicken in the pan with the skin facing down.
  3. Brown the chicken. Sear for 2–3 minutes per side, until the skin is crisp and golden. Transfer the chicken to a plate while you prepare the sauce.
  4. Mix the glaze. In a bowl, stir together the black pepper, garlic, oyster sauce, soy sauce, honey, and ketchup.
  5. Warm the sauce. Set the pan over medium heat and add the butter. Pour in the sauce mixture and let it simmer for 1 minute.
  6. Finish. Return the chicken to the pan. Increase the heat to medium-high and cook in the sauce for 1–2 minutes on each side, until cooked through and coated with glaze.

At the table

Rice makes a simple accompaniment. Spoon the sauce from the pan over the chicken before serving.
